- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create 'noodles'. Set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the fish fillets to the skillet, seasoning with salt and pepper. Cook for 4-5 minutes on each side until the fish is cooked through and flakes easily with a fork.
- Remove the fish from the skillet and set aside. In the same skillet, pour in the heavy cream and bring to a gentle simmer.
- Stir in grated Parmesan cheese and lemon juice, mixing until smooth and creamy. Adjust seasoning with salt and pepper to taste.
- Add the zucchini noodles to the skillet, tossing to coat them in the sauce. Cook for about 2-3 minutes until the noodles are just tender.
- Flake the cooked fish and gently fold it into the zucchini noodles and sauce. Cook for an additional minute to heat through.
- Serve immediately, garnished with fresh parsley.
