  • Heavy cream - 100ml
  • Parmesan cheese - 50g, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Spiralize the zucchini using a spiralizer or a julienne peeler to create 'noodles'. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fish fillets to the skillet, seasoning with salt and pepper. Cook for 4-5 minutes on each side until the fish is cooked through and flakes easily with a fork.
  4. Remove the fish from the skillet and set aside. In the same skillet, pour in the heavy cream and bring to a gentle simmer.
  5. Stir in grated Parmesan cheese and lemon juice, mixing until smooth and creamy. Adjust seasoning with salt and pepper to taste.
  6. Add the zucchini noodles to the skillet, tossing to coat them in the sauce. Cook for about 2-3 minutes until the noodles are just tender.
  7. Flake the cooked fish and gently fold it into the zucchini noodles and sauce. Cook for an additional minute to heat through.
  8. Serve immediately, garnished with fresh parsley.
