  • Zucchini - 2 medium
  • Chicken breast - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 ml
  • Parmesan cheese - 50 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Spiralize the zucchini using a spiralizer to create 'noodles'. Set aside.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chicken breast to the skillet, season with salt and black pepper, and cook until golden brown and cooked through, about 6-8 minutes per side. Remove chicken from the skillet and let it rest before slicing.
  4. In the same skillet, lower the heat and pour in the heavy cream. Stir in the grated Parmesan cheese until melted and combined, cooking for 2-3 minutes.
  5. Add the spiralized zucchini to the creamy sauce and toss gently for 2-3 minutes until heated through and coated in sauce.
  6. Slice the cooked chicken and serve it on top of the zucchini noodles, garnished with chopped parsley.
