- Heavy cream - 100 ml
- Parmesan cheese - 50 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Spiralize the zucchini using a spiralizer to create 'noodles'. Set aside.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chicken breast to the skillet, season with salt and black pepper, and cook until golden brown and cooked through, about 6-8 minutes per side. Remove chicken from the skillet and let it rest before slicing.
- In the same skillet, lower the heat and pour in the heavy cream. Stir in the grated Parmesan cheese until melted and combined, cooking for 2-3 minutes.
- Add the spiralized zucchini to the creamy sauce and toss gently for 2-3 minutes until heated through and coated in sauce.
- Slice the cooked chicken and serve it on top of the zucchini noodles, garnished with chopped parsley.
