Ingredients

  • Carrots - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 1/4 cup, chopped
  • Sea salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)

Steps

  1. Peel the carrots and use a spiralizer or a vegetable peeler to create spaghetti-like strands.
  2. Heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Add the carrot spaghetti to the skillet and cook for about 5-7 minutes, stirring occasionally until they are tender but still have a bite.
  4. Incorporate the halved cherry tomatoes and cook for another 3-4 minutes until they soften slightly.
  5. Season the mixture with salt, black pepper, and stir in the fresh basil and nutritional yeast.
  6. Cook for an additional minute, then remove from heat and serve warm.
