  • Sun-dried tomatoes (packed in oil) - 100 grams, chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Fresh basil - 10 grams, chopped
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 30 grams, toasted (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant but not browned.
  4. Stir in the chopped sun-dried tomatoes and red pepper flakes, cooking for another 2-3 minutes to combine the flavors.
  5. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  6. Add the drained spaghetti to the skillet with the sun-dried tomato mixture, tossing to combine.
  7. If needed, add reserved pasta water a little at a time to help the sauce coat the pasta.
  8. Season with salt, black pepper, and chopped fresh basil, mixing well.
  9. Serve hot, garnished with toasted pine nuts and additional basil if desired.
