Ingredients

  • Spaghetti - 200 grams
  • Fresh arugula - 100 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant, but not browned.
  3. Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
  4. Once the spaghetti is done, reserve 1/2 cup of the pasta water and drain the rest. Add the drained spaghetti to the skillet with the garlic and tomatoes.
  5. Toss the spaghetti with the sautéed ingredients, then add the arugula, lemon juice, and reserved pasta water to achieve the desired consistency.
  6. Season with salt and black pepper to taste. Remove from heat and stir in the grated Parmesan cheese.
  7. Serve immediately, garnished with additional Parmesan if desired.
