- Fresh arugula - 100 grams
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 100 grams, halved
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant, but not browned.
- Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
- Once the spaghetti is done, reserve 1/2 cup of the pasta water and drain the rest. Add the drained spaghetti to the skillet with the garlic and tomatoes.
- Toss the spaghetti with the sautéed ingredients, then add the arugula, lemon juice, and reserved pasta water to achieve the desired consistency.
- Season with salt and black pepper to taste. Remove from heat and stir in the grated Parmesan cheese.
- Serve immediately, garnished with additional Parmesan if desired.
