Ingredients
- Gluten-free spaghetti - 200 grams
- Fresh passion fruit pulp - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Cherry tomatoes - 150 grams, halved
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil leaves - 10 grams, chopped
- Parmesan cheese (optional, for serving) - 30 grams, grated
Steps
- Cook the gluten-free spaghetti according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the halved cherry tomatoes to the skillet and cook for an additional 5 minutes until they begin to soften.
- Stir in the fresh passion fruit pulp, salt, and black pepper. Simmer for 5 minutes, allowing the flavors to meld.
- If the sauce is too thick, add a little reserved pasta cooking water to achieve your desired consistency.
- Add the cooked spaghetti to the sauce, tossing to coat evenly. Stir in the chopped basil and cook for another 2 minutes.
- Serve hot, garnished with grated Parmesan cheese if desired.
