  • Capers - 30 grams, drained
  • Cherry tomatoes - 200 grams, halved
  • Parsley - 15 grams, chopped
  • Lemon juice - 15 milliliters
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  4. Stir in the capers and halved cherry tomatoes, cooking for another 3-4 minutes until the tomatoes start to soften.
  5. Once the spaghetti is done, reserve about 1/2 cup of the pasta water, then drain the pasta.
  6. Add the drained spaghetti to the skillet, tossing it with the caper and tomato mixture.
  7. If the pasta seems dry, gradually add the reserved pasta water until you reach your desired consistency.
  8. Stir in the lemon juice, chopped parsley, salt, and black pepper to taste.
  9. Remove from heat and serve immediately, garnished with extra parsley if desired.
