- Cherry tomatoes - 200 grams, halved
- Parsley - 15 grams, chopped
- Lemon juice - 15 milliliters
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the capers and halved cherry tomatoes, cooking for another 3-4 minutes until the tomatoes start to soften.
- Once the spaghetti is done, reserve about 1/2 cup of the pasta water, then drain the pasta.
- Add the drained spaghetti to the skillet, tossing it with the caper and tomato mixture.
- If the pasta seems dry, gradually add the reserved pasta water until you reach your desired consistency.
- Stir in the lemon juice, chopped parsley, salt, and black pepper to taste.
- Remove from heat and serve immediately, garnished with extra parsley if desired.
