Ingredients

  • Spaghetti - 200 grams
  • Shrimp (peeled and deveined) - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Cherry tomatoes (halved) - 150 grams
  • Zucchini (sliced) - 1 medium
  • Red bell pepper (sliced) - 1/2
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Crushed red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving some pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove shrimp and set aside.
  4. In the same skillet, add the sliced zucchini and red bell pepper, cooking for about 3-4 minutes until slightly softened.
  5. Add the halved cherry tomatoes and cook for another 2 minutes until they begin to soften.
  6. Return the shrimp to the skillet, then add cooked spaghetti, lemon juice, and chopped parsley. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  7. Season with salt, black pepper, and crushed red pepper flakes if desired. Serve immediately.
