- Shrimp (peeled and deveined) - 250 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Cherry tomatoes (halved) - 150 grams
- Zucchini (sliced) - 1 medium
- Red bell pepper (sliced) - 1/2
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Crushed red pepper flakes - 1/4 teaspoon (optional)
Steps
- Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving some pasta water.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove shrimp and set aside.
- In the same skillet, add the sliced zucchini and red bell pepper, cooking for about 3-4 minutes until slightly softened.
- Add the halved cherry tomatoes and cook for another 2 minutes until they begin to soften.
- Return the shrimp to the skillet, then add cooked spaghetti, lemon juice, and chopped parsley. Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Season with salt, black pepper, and crushed red pepper flakes if desired. Serve immediately.
