Ingredients

  • Espaguete - 200 grams
  • Brócolis (broccoli) - 200 grams, chopped into florets
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Crushed red pepper flakes - 1/2 teaspoon (optional)
  • Fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil. Add the espaguete and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. In the last 3 minutes of cooking the pasta, add the chopped brócolis to the pot with the pasta.
  3. While the pasta and broccoli are cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Once the pasta and broccoli are cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta and broccoli.
  5. Add the drained pasta and broccoli to the skillet with the garlic. Pour in the lemon juice, lemon zest, and nutritional yeast. Toss everything together, adding reserved pasta water as needed to help coat the pasta evenly.
  6. Season with salt, black pepper, and crushed red pepper flakes (if using) to taste. Toss again to combine.
  7. Serve immediately, garnished with fresh parsley.
