- Almeirão (dandelion greens) - 100 grams, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cherry tomatoes - 150 grams, halved
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped almeirão and cherry tomatoes to the skillet. Cook for 4-5 minutes, stirring occasionally, until the greens are wilted and the tomatoes are softened.
- Once the spaghetti is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the almeirão and tomatoes.
- Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt, black pepper, and lemon juice to taste.
- Serve immediately, garnished with grated Parmesan cheese on top.
