  • Spaghetti - 160 grams
  • Almeirão (dandelion greens) - 100 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped almeirão and cherry tomatoes to the skillet. Cook for 4-5 minutes, stirring occasionally, until the greens are wilted and the tomatoes are softened.
  4. Once the spaghetti is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the almeirão and tomatoes.
  5. Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt, black pepper, and lemon juice to taste.
  6. Serve immediately, garnished with grated Parmesan cheese on top.
