Ingredients

  • All-purpose flour - 250 grams
  • Instant yeast - 7 grams
  • Warm water - 150 ml
  • Olive oil - 30 ml
  • Sugar - 5 grams
  • Salt - 5 grams
  • Spinach - 100 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a large mixing bowl, combine the flour, yeast, sugar, and salt.
  2. Add the warm water and olive oil to the dry ingredients and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. Meanwhile, heat a skillet over medium heat and sauté the onion and garlic until translucent.
  6. Add the chopped spinach and diced tomato, cooking until the spinach is wilted and tomatoes are softened.
  7. Stir in the cumin, black pepper, and crumbled feta cheese, mixing well. Remove from heat and let the filling cool.
  8. Preheat the oven to 180°C (350°F).
  9. Once the dough has risen, punch it down and divide it into 6 equal pieces.
  10. Roll each piece into a small circle (about 10 cm in diameter).
  11. Place a spoonful of the filling in the center of each circle, fold the edges over to create a triangle shape, and pinch to seal.
  12. Place the esfihas on a baking tray lined with parchment paper and brush the tops with the beaten egg.
  13. Bake in the preheated oven for 20-25 minutes or until golden brown.
  14. Remove from the oven and let cool slightly before serving.
