- All-purpose flour - 250 grams
- Instant yeast - 7 grams
- Warm water - 150 ml
- Olive oil - 30 ml
- Sugar - 5 grams
- Salt - 5 grams
- Spinach - 100 grams, chopped
- Feta cheese - 100 grams, crumbled
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- In a large mixing bowl, combine the flour, yeast, sugar, and salt.
- Add the warm water and olive oil to the dry ingredients and mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Meanwhile, heat a skillet over medium heat and sauté the onion and garlic until translucent.
- Add the chopped spinach and diced tomato, cooking until the spinach is wilted and tomatoes are softened.
- Stir in the cumin, black pepper, and crumbled feta cheese, mixing well. Remove from heat and let the filling cool.
- Preheat the oven to 180°C (350°F).
- Once the dough has risen, punch it down and divide it into 6 equal pieces.
- Roll each piece into a small circle (about 10 cm in diameter).
- Place a spoonful of the filling in the center of each circle, fold the edges over to create a triangle shape, and pinch to seal.
- Place the esfihas on a baking tray lined with parchment paper and brush the tops with the beaten egg.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
