Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Chickpeas (cooked and mashed) - 100 grams
- Onion (finely chopped) - 50 grams
- Tomato (finely chopped) - 50 grams
- Bell pepper (finely chopped) - 50 grams
- Garlic (minced) - 1 clove
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - to taste
- Fresh parsley (chopped) - 2 tablespoons
Steps
- In a bowl, dissolve the sugar in warm water and sprinkle the yeast on top. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough for about 5-7 minutes until smooth and elastic. Cover with a cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the filling. In a pan, heat a tablespoon of olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the bell pepper and tomato to the pan and cook for another 5 minutes. Stir in the mashed chickpeas, cumin, paprika, black pepper, and parsley. Cook for an additional 2-3 minutes, then remove from heat.
- Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small circle (about 10 cm in diameter).
- Place a spoonful of the filling in the center of each circle and fold the edges to form a triangle, pinching to seal.
- Preheat the oven to 180°C (350°F). Place the esfihas on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
