- Active dry yeast - 7g
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Chopped onions - 50g
- Chopped bell pepper - 50g
- Chopped tomatoes - 50g
- Chopped spinach - 50g
- Chopped zucchini - 50g
- Garlic, minced - 1 clove
- Ground cumin - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a bowl, combine warm water and yeast; let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt, then add olive oil and the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
- Meanwhile, in a skillet, heat a tablespoon of olive oil over medium heat. Add onions and garlic, sautéing until translucent.
- Add bell pepper, zucchini, and tomatoes to the skillet; cook for about 5 minutes until softened.
- Stir in spinach, ground cumin, black pepper, and parsley; cook for another 2-3 minutes until spinach is wilted. Remove from heat and let the filling cool.
- Preheat the oven to 200°C (400°F).
- Once the dough has risen, divide it into 4 equal portions. Roll each portion into a circle about 10 cm in diameter.
- Place a spoonful of the vegetable filling in the center of each dough circle. Fold the edges to create a triangular shape, pinching to seal.
- Place the esfihas on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
