Ingredients

  • Warm water - 150ml
  • Active dry yeast - 7g
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Chopped onions - 50g
  • Chopped bell pepper - 50g
  • Chopped tomatoes - 50g
  • Chopped spinach - 50g
  • Chopped zucchini - 50g
  • Garlic, minced - 1 clove
  • Ground cumin - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a bowl, combine warm water and yeast; let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt, then add olive oil and the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
  4. Meanwhile, in a skillet, heat a tablespoon of olive oil over medium heat. Add onions and garlic, sautéing until translucent.
  5. Add bell pepper, zucchini, and tomatoes to the skillet; cook for about 5 minutes until softened.
  6. Stir in spinach, ground cumin, black pepper, and parsley; cook for another 2-3 minutes until spinach is wilted. Remove from heat and let the filling cool.
  7. Preheat the oven to 200°C (400°F).
  8. Once the dough has risen, divide it into 4 equal portions. Roll each portion into a circle about 10 cm in diameter.
  9. Place a spoonful of the vegetable filling in the center of each dough circle. Fold the edges to create a triangular shape, pinching to seal.
  10. Place the esfihas on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
