Ingredients

  • All-purpose flour - 250g
  • Active dry yeast - 7g
  • Warm water - 150ml
  • Sugar - 5g
  • Salt - 5g
  • Olive oil - 30ml
  • Ground beef - 200g
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Paprika - 5g
  • Cumin - 2g
  • Black pepper - 2g
  • Parsley - 10g, chopped
  • Egg - 1, beaten (for brushing)

Steps

  1. In a bowl, dissolve the sugar and yeast in warm water. Let it sit for 10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, and mix until a dough forms.
  3. Knead the dough for about 5-7 minutes until smooth. Cover it with a clean cloth and let it rise in a warm place for 30 minutes.
  4. In a skillet, heat a little olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  5. Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon.
  6. Stir in the diced tomato, paprika, cumin, black pepper, and parsley. Cook for another 5 minutes until the mixture is well combined and moisture is reduced. Let it cool.
  7. Preheat the oven to 180°C (350°F).
  8. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small circle on a floured surface.
  9. Place a spoonful of the meat filling in the center of each circle. Fold the edges to form a triangular shape, pinching them to seal.
  10. Brush the tops of the esfihas with the beaten egg. Place them on a baking sheet lined with parchment paper.
  11. Bake for 20-25 minutes or until golden brown. Serve warm.
