Ingredients
- All-purpose flour - 250g
- Active dry yeast - 7g
- Warm water - 150ml
- Sugar - 5g
- Salt - 5g
- Olive oil - 30ml
- Ground beef - 200g
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Paprika - 5g
- Cumin - 2g
- Black pepper - 2g
- Parsley - 10g, chopped
- Egg - 1, beaten (for brushing)
Steps
- In a bowl, dissolve the sugar and yeast in warm water. Let it sit for 10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, and mix until a dough forms.
- Knead the dough for about 5-7 minutes until smooth. Cover it with a clean cloth and let it rise in a warm place for 30 minutes.
- In a skillet, heat a little olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon.
- Stir in the diced tomato, paprika, cumin, black pepper, and parsley. Cook for another 5 minutes until the mixture is well combined and moisture is reduced. Let it cool.
- Preheat the oven to 180°C (350°F).
- Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small circle on a floured surface.
- Place a spoonful of the meat filling in the center of each circle. Fold the edges to form a triangular shape, pinching them to seal.
- Brush the tops of the esfihas with the beaten egg. Place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown. Serve warm.
