Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 120 milliliters
  • Olive oil - 30 milliliters
  • Active dry yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Pumpkin (cooked and mashed) - 200 grams
  • Onion (finely chopped) - 50 grams
  • Garlic (minced) - 1 clove
  • Cumin powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the frothy yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, heat a tablespoon of olive oil in a pan over medium heat. Sauté the chopped onion and minced garlic until translucent.
  5. Add the cooked and mashed pumpkin to the pan along with cumin, black pepper, and parsley. Mix well and cook for another 5 minutes. Remove from heat and let it cool.
  6. Preheat the oven to 180°C (350°F).
  7. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small circle (about 10 cm in diameter).
  8. Place a spoonful of the pumpkin filling in the center of each circle. Fold the edges together to form a triangle, pinching to seal tightly.
  9. Place the esfihas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
  10. Remove from the oven and allow to cool slightly before serving.
