Ingredients
- All-purpose flour - 250 grams
- Warm water - 120 milliliters
- Olive oil - 30 milliliters
- Active dry yeast - 7 grams
- Sugar - 5 grams
- Salt - 5 grams
- Pumpkin (cooked and mashed) - 200 grams
- Onion (finely chopped) - 50 grams
- Garlic (minced) - 1 clove
- Cumin powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
Steps
- In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the frothy yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
- While the dough is rising, heat a tablespoon of olive oil in a pan over medium heat. Sauté the chopped onion and minced garlic until translucent.
- Add the cooked and mashed pumpkin to the pan along with cumin, black pepper, and parsley. Mix well and cook for another 5 minutes. Remove from heat and let it cool.
- Preheat the oven to 180°C (350°F).
- Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small circle (about 10 cm in diameter).
- Place a spoonful of the pumpkin filling in the center of each circle. Fold the edges together to form a triangle, pinching to seal tightly.
- Place the esfihas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
- Remove from the oven and allow to cool slightly before serving.
