Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 milliliters
  • Active dry yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 30 milliliters
  • Ground beef (kosher) - 200 grams
  • Onion, finely chopped - 1 small
  • Garlic, minced - 1 clove
  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, heat a skillet over medium heat. Add chopped onion and garlic, sautéing until translucent.
  5. Add ground beef to the skillet. Cook until browned, then stir in tomato paste, cumin, paprika, black pepper, and parsley. Cook for another 5 minutes, then remove from heat and let cool.
  6. Preheat the oven to 200°C (400°F). After the dough has risen, punch it down and divide it into 8 equal pieces.
  7. Roll each piece into a circle about 10 cm in diameter. Place a spoonful of the meat filling in the center and fold the edges over to form a triangular shape.
  8. Place the esfihas on a baking sheet lined with parchment paper. Brush with olive oil and bake for 15-20 minutes or until golden brown.
  9. Serve hot with a drizzle of lemon juice on top.
