Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 milliliters
- Active dry yeast - 7 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 30 milliliters
- Ground beef (kosher) - 200 grams
- Onion, finely chopped - 1 small
- Garlic, minced - 1 clove
- Tomato paste - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for 30 minutes.
- While the dough is rising, heat a skillet over medium heat. Add chopped onion and garlic, sautéing until translucent.
- Add ground beef to the skillet. Cook until browned, then stir in tomato paste, cumin, paprika, black pepper, and parsley. Cook for another 5 minutes, then remove from heat and let cool.
- Preheat the oven to 200°C (400°F). After the dough has risen, punch it down and divide it into 8 equal pieces.
- Roll each piece into a circle about 10 cm in diameter. Place a spoonful of the meat filling in the center and fold the edges over to form a triangular shape.
- Place the esfihas on a baking sheet lined with parchment paper. Brush with olive oil and bake for 15-20 minutes or until golden brown.
- Serve hot with a drizzle of lemon juice on top.
