Ingredients

  • Young green jackfruit - 400 grams (canned, drained and rinsed)
  • Sweet potatoes - 300 grams, peeled and diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 ml
  • Tomato - 1 medium, diced
  • Bell pepper - 1/2, diced
  • Cilantro - 1/4 cup, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime juice - 1 tablespoon
  • Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a pot, boil the diced sweet potatoes in salted water for about 15 minutes or until tender. Drain and mash them with a fork or potato masher. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Stir in the drained jackfruit, diced tomato, bell pepper, cumin, paprika, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally until the mixture is heated through and well combined.
  6. Pour the vegetable broth into the skillet and let it simmer for about 5 minutes. Remove from heat and stir in the chopped cilantro and lime juice.
  7. In a baking dish, spread the jackfruit mixture evenly on the bottom. Top it with the mashed sweet potatoes, smoothing it out with a spatula.
  8. If using, sprinkle nutritional yeast on top for added flavor.
  9. Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
  10. Remove from the oven and let it sit for a few minutes before serving.
