- Young green jackfruit - 400 grams (canned, drained and rinsed)
- Sweet potatoes - 300 grams, peeled and diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 200 ml
- Tomato - 1 medium, diced
- Bell pepper - 1/2, diced
- Cilantro - 1/4 cup, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime juice - 1 tablespoon
- Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)
Steps
- Preheat your oven to 180°C (350°F).
- In a pot, boil the diced sweet potatoes in salted water for about 15 minutes or until tender. Drain and mash them with a fork or potato masher. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the drained jackfruit, diced tomato, bell pepper, cumin, paprika, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally until the mixture is heated through and well combined.
- Pour the vegetable broth into the skillet and let it simmer for about 5 minutes. Remove from heat and stir in the chopped cilantro and lime juice.
- In a baking dish, spread the jackfruit mixture evenly on the bottom. Top it with the mashed sweet potatoes, smoothing it out with a spatula.
- If using, sprinkle nutritional yeast on top for added flavor.
- Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
- Remove from the oven and let it sit for a few minutes before serving.
