Ingredients

  • Dried beef (carne seca) - 200 grams
  • Sweet potatoes - 300 grams
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the dried beef in water overnight to rehydrate and reduce the saltiness.
  2. The next day, drain and rinse the beef. Place it in a pot, cover with fresh water, and cook for about 30 minutes until tender.
  3. While the beef is cooking, peel and chop the sweet potatoes into chunks. Boil them in a separate pot for about 15-20 minutes until soft.
  4. Drain the sweet potatoes and mash them in a bowl. Add coconut milk, a pinch of salt, and black pepper to taste, mixing until creamy.
  5. In a skillet, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
  6. Shred the cooked beef and add it to the skillet with the onions and garlic. Stir in fresh parsley and season with salt and black pepper.
  7. Preheat the oven to 180°C (350°F).
  8. In a baking dish, layer the beef mixture on the bottom and top it with the sweet potato mash, smoothing it out evenly.
  9. Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
  10. Remove from the oven and let it cool slightly before serving.
