- Dried beef (carne seca) - 200 grams
- Sweet potatoes - 300 grams
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the dried beef in water overnight to rehydrate and reduce the saltiness.
- The next day, drain and rinse the beef. Place it in a pot, cover with fresh water, and cook for about 30 minutes until tender.
- While the beef is cooking, peel and chop the sweet potatoes into chunks. Boil them in a separate pot for about 15-20 minutes until soft.
- Drain the sweet potatoes and mash them in a bowl. Add coconut milk, a pinch of salt, and black pepper to taste, mixing until creamy.
- In a skillet, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
- Shred the cooked beef and add it to the skillet with the onions and garlic. Stir in fresh parsley and season with salt and black pepper.
- Preheat the oven to 180°C (350°F).
- In a baking dish, layer the beef mixture on the bottom and top it with the sweet potato mash, smoothing it out evenly.
- Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
- Remove from the oven and let it cool slightly before serving.
