- Sweet potatoes - 500 grams
- Olive oil - 2 tablespoons

- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Canned black beans - 200 grams, drained and rinsed
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Peel and chop the sweet potatoes into chunks. Boil them in a pot of salted water for about 15-20 minutes, or until tender.
- While the sweet potatoes are boiling, heat olive oil in a pan over medium heat. Add diced onion and garlic, sautéing until translucent.
- Add the diced bell pepper and zucchini to the pan, cooking for about 5 minutes until softened.
- Stir in the black beans, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, then remove from heat and mix in chopped parsley.
- Once the sweet potatoes are cooked, drain them and return to the pot. Mash them with a fork or potato masher until smooth.
- Preheat your oven to 180°C (350°F).
- In a baking dish, layer half of the sweet potato mash at the bottom, followed by the vegetable and bean mixture, and then top with the remaining sweet potato mash.
- Smooth the top with a spatula and bake in the preheated oven for about 15-20 minutes, until heated through and slightly golden on top.
- Remove from the oven and let it cool for a few minutes before serving.
