- Bell pepper - 1 small, diced
- Zucchini - 1 small, diced
- Tomato - 1 medium, diced
- Black beans - 200 grams, cooked
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons
- Plant-based milk - 100 ml
- Fresh parsley - for garnish
Steps
- Peel and chop the potatoes into cubes, then boil them in salted water for about 15-20 minutes or until tender.
- In a pan, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced bell pepper and zucchini to the pan and cook for another 5 minutes, stirring occasionally.
- Stir in the diced tomato, cooked black beans, cumin, paprika, salt, and black pepper. Cook for an additional 5-7 minutes until everything is heated through. Remove from heat.
- Once the potatoes are cooked, drain them and return to the pot. Add nutritional yeast and plant-based milk, then mash until smooth and creamy. Adjust salt if necessary.
- Preheat the oven to 180°C (350°F).
- In a baking dish, layer half of the mashed potatoes at the bottom, followed by the bean and vegetable filling. Top with the remaining mashed potatoes.
- Smooth the top with a spatula and bake in the preheated oven for 20 minutes until golden and slightly crispy on top.
- Remove from the oven, let it cool for a few minutes, then garnish with fresh parsley before serving.
