- Shrimp - 200 grams, peeled and deveined
- Squid - 150 grams, cleaned and sliced
- Mussels - 150 grams, cleaned
- Lime juice - 1 tablespoon
- Sea salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1 teaspoon (optional)
Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
- Add the diced red bell pepper and cook for an additional 3-4 minutes.
- Stir in the diced tomatoes and cook until they begin to soften, about 5 minutes.
- Pour in the fish stock and bring to a gentle simmer. Let it cook for 5 minutes to allow the flavors to meld.
- Add the coconut milk and stir well to combine. Season with sea salt, black pepper, and red pepper flakes if using.
- Add the shrimp, squid, and mussels to the pot. Cover and cook for 5-7 minutes, or until the seafood is cooked through and the mussels have opened.
- Remove from heat and stir in the lime juice and chopped cilantro.
- Serve hot, garnished with extra cilantro if desired.
