Ingredients
- All-purpose flour - 200 grams
- Butter - 100 grams
- Cold water - 50 ml
- Salt - 1 teaspoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Heart of palm - 200 grams, chopped
- Cream cheese - 100 grams
- Parsley - 2 tablespoons, chopped
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent.
- Add the chopped heart of palm and cook for another 5 minutes. Stir in the cream cheese, parsley, black pepper, and mix until well combined. Remove from heat and let cool.
- Preheat the oven to 180°C (350°F).
- Roll out the dough on a floured surface to about 3 mm thickness. Cut into circles large enough to fit into a muffin tin.
- Place the dough circles into the muffin tin and fill each with the heart of palm mixture.
- Roll out the remaining dough to create lids for the empadas. Seal the edges by crimping with a fork.
- Brush the tops with beaten egg and bake for 25-30 minutes, or until golden brown.
- Let cool for a few minutes before serving.
