Ingredients

  • All-purpose flour - 200 grams
  • Butter - 100 grams
  • Cold water - 50 ml
  • Salt - 1 teaspoon
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Heart of palm - 200 grams, chopped
  • Cream cheese - 100 grams
  • Parsley - 2 tablespoons, chopped
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent.
  4. Add the chopped heart of palm and cook for another 5 minutes. Stir in the cream cheese, parsley, black pepper, and mix until well combined. Remove from heat and let cool.
  5. Preheat the oven to 180°C (350°F).
  6. Roll out the dough on a floured surface to about 3 mm thickness. Cut into circles large enough to fit into a muffin tin.
  7. Place the dough circles into the muffin tin and fill each with the heart of palm mixture.
  8. Roll out the remaining dough to create lids for the empadas. Seal the edges by crimping with a fork.
  9. Brush the tops with beaten egg and bake for 25-30 minutes, or until golden brown.
  10. Let cool for a few minutes before serving.
