Empada de Lentilha is a deliciously savory Brazilian pastry filled with spiced lentils, making it a perfect dairy-free appetizer. These hand-held pies are flaky on the outside and packed with flavor on the inside, ideal for sharing or enjoying as a snack.

Ingredients
- All-purpose flour - 200 g
- Olive oil - 80 ml
- Water - 60 ml
- Salt - 1 tsp
- Cooked lentils - 150 g
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 tsp
- Paprika - 1 tsp
- Black pepper - 1/2 tsp
- Fresh parsley - 2 tbsp, chopped
- Bay leaf - 1
- Vegetable broth - 100 ml
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add the olive oil and mix until the mixture resembles coarse crumbs.
- Gradually add the water while mixing until a dough forms. Knead briefly on a floured surface until smooth. Cover with plastic wrap and let it rest for 30 minutes.
- In a skillet, heat a splash of olive oil over medium heat. Sauté the chopped onion and garlic until they are soft and translucent.
- Add the cooked lentils, cumin, paprika, black pepper, bay leaf, and vegetable broth. Stir well and let it simmer for about 10 minutes until the mixture thickens. Remove the bay leaf and stir in the fresh parsley. Allow to cool.
- Preheat the oven to 180°C (350°F).
- Divide the rested dough into two equal pieces. Roll out each piece into a circle, about 5 mm thick.
- Place one rolled-out dough circle into a greased muffin tin, pressing it gently to fit. Spoon the lentil mixture into the center.
- Cover with another rolled-out dough circle, sealing the edges by crimping with a fork. Cut a small slit on top to allow steam to escape.
- Repeat with the second portion of dough and lentil filling.
- Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool slightly before serving.
