- Bell pepper - 1/2, diced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Whole wheat flour - 200 grams
- Water - 50 ml (for dough)
- Olive oil - 2 tablespoons (for dough)
- Vegan butter - 1 tablespoon (for brushing)
Steps
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced bell pepper, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are tender.
- Stir in the cooked chickpeas and chopped parsley. Mash the mixture slightly with a fork to combine flavors, then remove from heat and let cool.
- In a mixing bowl, combine 200 grams of whole wheat flour and 2 tablespoons of olive oil. Gradually add 50 ml of water, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 15 minutes.
- Preheat your oven to 200°C (400°F).
- Divide the dough into 4 equal portions and roll each one out into a circle about 1/4 inch thick.
- Place a tablespoon of the chickpea filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
- Brush the tops of the empanadas with melted vegan butter and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.
