Ingredients

  • Chickpeas - 200 grams (cooked)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1/2, diced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Whole wheat flour - 200 grams
  • Water - 50 ml (for dough)
  • Olive oil - 2 tablespoons (for dough)
  • Vegan butter - 1 tablespoon (for brushing)

Steps

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the diced bell pepper, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are tender.
  3. Stir in the cooked chickpeas and chopped parsley. Mash the mixture slightly with a fork to combine flavors, then remove from heat and let cool.
  4. In a mixing bowl, combine 200 grams of whole wheat flour and 2 tablespoons of olive oil. Gradually add 50 ml of water, mixing until a dough forms.
  5. Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 15 minutes.
  6. Preheat your oven to 200°C (400°F).
  7. Divide the dough into 4 equal portions and roll each one out into a circle about 1/4 inch thick.
  8. Place a tablespoon of the chickpea filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  9. Brush the tops of the empanadas with melted vegan butter and place them on a baking sheet lined with parchment paper.
  10. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.
