Ingredients
- All-purpose flour - 250 grams
- Butter - 125 grams, cold and cubed
- Egg yolk - 1 large
- Cold water - 60 ml
- Cooked chicken breast - 200 grams, shredded
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Chicken broth - 100 ml
- Green olives - 50 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Parsley - 1 tablespoon, chopped
- Egg - 1, for egg wash
Steps
- In a large bowl, combine the all-purpose flour and cubed butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- Add the egg yolk and cold water to the flour mixture. Mix until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the shredded chicken, chicken broth, green olives, salt, black pepper, paprika, and parsley to the skillet. Cook for about 5-7 minutes until heated through and well combined. Remove from heat and let cool.
- Preheat the oven to 180°C (350°F).
- Roll out the chilled dough on a floured surface to about 3 mm thick. Cut out circles large enough to fit into your muffin tins.
- Place the dough circles into the muffin tins, pressing gently to shape them. Fill each crust with the chicken filling.
- Roll out the remaining dough to create lids for the pies. Cut out circles and place them on top of the filled crusts. Pinch the edges to seal.
- Beat the egg and brush the tops of the empadas with the egg wash.
- Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool slightly before serving.
