Ingredients

  • All-purpose flour - 250 grams
  • Butter - 125 grams, cold and cubed
  • Egg yolk - 1 large
  • Cold water - 60 ml
  • Cooked chicken breast - 200 grams, shredded
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Chicken broth - 100 ml
  • Green olives - 50 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Parsley - 1 tablespoon, chopped
  • Egg - 1, for egg wash

Steps

  1. In a large bowl, combine the all-purpose flour and cubed butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  2. Add the egg yolk and cold water to the flour mixture. Mix until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the shredded chicken, chicken broth, green olives, salt, black pepper, paprika, and parsley to the skillet. Cook for about 5-7 minutes until heated through and well combined. Remove from heat and let cool.
  5. Preheat the oven to 180°C (350°F).
  6. Roll out the chilled dough on a floured surface to about 3 mm thick. Cut out circles large enough to fit into your muffin tins.
  7. Place the dough circles into the muffin tins, pressing gently to shape them. Fill each crust with the chicken filling.
  8. Roll out the remaining dough to create lids for the pies. Cut out circles and place them on top of the filled crusts. Pinch the edges to seal.
  9. Beat the egg and brush the tops of the empadas with the egg wash.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool slightly before serving.
