Ingredients
- Chicken breast - 200 grams, cooked and shredded
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 small, diced
- Carrot - 1 medium, grated
- Tomato paste - 2 tablespoons
- Chicken broth - 100 ml
- Black olives - 50 grams, pitted and sliced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- All-purpose flour - 200 grams
- Butter - 100 grams, cold and cubed
- Ice water - 4-5 tablespoons
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat olive oil over medium heat and sauté the chopped onion and garlic until translucent.
- Add the diced bell pepper and grated carrot, cooking for an additional 5 minutes.
- Stir in the shredded chicken, tomato paste, chicken broth, black olives, parsley, salt, black pepper, and paprika. Cook for another 5-7 minutes, then set aside to cool.
- In a mixing bowl, combine the flour and cubed cold butter. Use your fingers or a pastry cutter to mix until it resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until the dough comes together. Form into a ball, wrap in plastic, and refrigerate for 30 minutes.
- Divide the dough in half. Roll out one half to fit a 20 cm pie dish and place it in the dish.
- Fill the crust with the chicken mixture, then roll out the second half of the dough and cover the filling. Seal the edges and make a few slits in the top crust for steam to escape.
- Brush the top with the beaten egg and bake in the preheated oven for 30-35 minutes or until golden brown.
- Allow to cool for a few minutes before slicing and serving.
