Ingredients

  • Chicken breast - 200 grams, cooked and shredded
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 small, diced
  • Carrot - 1 medium, grated
  • Tomato paste - 2 tablespoons
  • Chicken broth - 100 ml
  • Black olives - 50 grams, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • All-purpose flour - 200 grams
  • Butter - 100 grams, cold and cubed
  • Ice water - 4-5 tablespoons
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat olive oil over medium heat and sauté the chopped onion and garlic until translucent.
  3. Add the diced bell pepper and grated carrot, cooking for an additional 5 minutes.
  4. Stir in the shredded chicken, tomato paste, chicken broth, black olives, parsley, salt, black pepper, and paprika. Cook for another 5-7 minutes, then set aside to cool.
  5. In a mixing bowl, combine the flour and cubed cold butter. Use your fingers or a pastry cutter to mix until it resembles coarse crumbs.
  6. Add ice water, one tablespoon at a time, until the dough comes together. Form into a ball, wrap in plastic, and refrigerate for 30 minutes.
  7. Divide the dough in half. Roll out one half to fit a 20 cm pie dish and place it in the dish.
  8. Fill the crust with the chicken mixture, then roll out the second half of the dough and cover the filling. Seal the edges and make a few slits in the top crust for steam to escape.
  9. Brush the top with the beaten egg and bake in the preheated oven for 30-35 minutes or until golden brown.
  10. Allow to cool for a few minutes before slicing and serving.
