Ingredients
- All-purpose flour - 200 grams
- Unsalted margarine - 100 grams
- Cold water - 60 ml
- Salt - 1 teaspoon
- Cooked shredded chicken - 150 grams
- Chopped onions - 1 medium (about 100 grams)
- Chopped bell pepper - 1 medium (about 100 grams)
- Chopped tomatoes - 2 medium (about 200 grams)
- Green olives, pitted and chopped - 50 grams
- Chopped parsley - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Egg (for egg wash) - 1 large
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and salt. Add the cold margarine and mix until crumbly.
- Gradually add cold water, mixing until the dough forms. Wrap in plastic and refrigerate for 30 minutes.
- In a skillet, sauté the chopped onions and bell pepper over medium heat until softened, about 5 minutes.
- Add the chopped tomatoes and cook for another 5 minutes until the mixture thickens.
- Stir in the cooked shredded chicken, green olives, parsley, black pepper, and paprika. Cook for an additional 5 minutes, then remove from heat.
- Roll out the dough on a floured surface to about 5mm thickness. Cut out two circles – one for the base and one for the top.
- Place one circle in a greased pie dish, fill with the chicken mixture, and cover with the second circle of dough. Seal the edges and make small slits on top to allow steam to escape.
- Beat the egg and brush it over the top crust.
- Bake in the preheated oven for 30 minutes or until golden brown. Let cool slightly before serving.
