Ingredients

  • All-purpose flour - 200 grams
  • Unsalted margarine - 100 grams
  • Cold water - 60 ml
  • Salt - 1 teaspoon
  • Cooked shredded chicken - 150 grams
  • Chopped onions - 1 medium (about 100 grams)
  • Chopped bell pepper - 1 medium (about 100 grams)
  • Chopped tomatoes - 2 medium (about 200 grams)
  • Green olives, pitted and chopped - 50 grams
  • Chopped parsley - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Egg (for egg wash) - 1 large

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and salt. Add the cold margarine and mix until crumbly.
  3. Gradually add cold water, mixing until the dough forms. Wrap in plastic and refrigerate for 30 minutes.
  4. In a skillet, sauté the chopped onions and bell pepper over medium heat until softened, about 5 minutes.
  5. Add the chopped tomatoes and cook for another 5 minutes until the mixture thickens.
  6. Stir in the cooked shredded chicken, green olives, parsley, black pepper, and paprika. Cook for an additional 5 minutes, then remove from heat.
  7. Roll out the dough on a floured surface to about 5mm thickness. Cut out two circles – one for the base and one for the top.
  8. Place one circle in a greased pie dish, fill with the chicken mixture, and cover with the second circle of dough. Seal the edges and make small slits on top to allow steam to escape.
  9. Beat the egg and brush it over the top crust.
  10. Bake in the preheated oven for 30 minutes or until golden brown. Let cool slightly before serving.
