  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Carrot - 1 medium, grated
  • Peas - 100 grams, fresh or frozen
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lime juice - 1 tablespoon

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 5 minutes.
  2. Add the diced red and green bell peppers, grated carrot, and diced tomato to the skillet. Cook for another 5 minutes until the vegetables soften.
  3. Stir in the peas and season with salt and black pepper. Cook for an additional 3-4 minutes.
  4. In a separate pot, bring the vegetable broth to a simmer. Gradually whisk in the corn flour until smooth. Continue to cook, stirring frequently, until the mixture thickens, about 10 minutes.
  5. Combine the vegetable mixture with the thickened corn flour in the skillet. Stir in the chopped cilantro and lime juice, mixing well.
  6. Transfer the mixture into a greased mold or dish, pressing it down to pack it tightly. Let it cool for about 10 minutes to set.
  7. Once set, invert the mold onto a serving plate. Slice into wedges and serve warm.
