- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Carrot - 1 medium, grated
- Peas - 100 grams, fresh or frozen
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lime juice - 1 tablespoon
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 5 minutes.
- Add the diced red and green bell peppers, grated carrot, and diced tomato to the skillet. Cook for another 5 minutes until the vegetables soften.
- Stir in the peas and season with salt and black pepper. Cook for an additional 3-4 minutes.
- In a separate pot, bring the vegetable broth to a simmer. Gradually whisk in the corn flour until smooth. Continue to cook, stirring frequently, until the mixture thickens, about 10 minutes.
- Combine the vegetable mixture with the thickened corn flour in the skillet. Stir in the chopped cilantro and lime juice, mixing well.
- Transfer the mixture into a greased mold or dish, pressing it down to pack it tightly. Let it cool for about 10 minutes to set.
- Once set, invert the mold onto a serving plate. Slice into wedges and serve warm.
