Ingredients

  • Cornmeal - 1 cup (150g)
  • Vegetable broth - 1.5 cups (360ml)
  • Chopped bell pepper (red or yellow) - 1/2 cup (75g)
  • Chopped onion - 1/2 cup (75g)
  • Chopped tomato - 1/2 cup (75g)
  • Chopped green olives - 1/4 cup (35g)
  • Chopped fresh parsley - 1/4 cup (15g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic (minced) - 2 cloves
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1 teaspoon

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the bell pepper and tomato to the skillet, cooking for an additional 5 minutes until softened.
  3. Stir in the chopped green olives, parsley, salt, and black pepper. Remove from heat and let it cool slightly.
  4. In a large mixing bowl, combine the cornmeal, baking powder, and vegetable broth, stirring until well mixed.
  5. Fold in the sautéed vegetable mixture into the cornmeal mixture until evenly distributed.
  6. Pour the mixture into a greased round baking dish (around 20 cm in diameter) and smooth the top.
  7. Cover with foil and steam in a pot with boiling water for about 30 minutes, or until firm.
  8. Remove from heat and let it cool for a few minutes before slicing and serving.
