- Cornmeal - 1 cup (150g)
- Vegetable broth - 1.5 cups (360ml)
- Chopped bell pepper (red or yellow) - 1/2 cup (75g)
- Chopped onion - 1/2 cup (75g)
- Chopped tomato - 1/2 cup (75g)
- Chopped green olives - 1/4 cup (35g)
- Chopped fresh parsley - 1/4 cup (15g)
- Olive oil - 2 tablespoons (30ml)
- Garlic (minced) - 2 cloves
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1 teaspoon
Steps
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the bell pepper and tomato to the skillet, cooking for an additional 5 minutes until softened.
- Stir in the chopped green olives, parsley, salt, and black pepper. Remove from heat and let it cool slightly.
- In a large mixing bowl, combine the cornmeal, baking powder, and vegetable broth, stirring until well mixed.
- Fold in the sautéed vegetable mixture into the cornmeal mixture until evenly distributed.
- Pour the mixture into a greased round baking dish (around 20 cm in diameter) and smooth the top.
- Cover with foil and steam in a pot with boiling water for about 30 minutes, or until firm.
- Remove from heat and let it cool for a few minutes before slicing and serving.
