Ingredients

  • Cornmeal - 200 grams
  • Water - 250 milliliters
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Tomato - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1/2 medium, diced
  • Chopped cilantro - 2 tablespoons
  • Feta cheese - 50 grams, crumbled
  • Avocado - 1/2, sliced

Steps

  1. In a mixing bowl, combine the cornmeal and salt. Gradually add water while stirring until you achieve a thick, paste-like consistency.
  2. Let the mixture sit for about 10 minutes to hydrate.
  3. In a steamer or cuscuzera, add water to the bottom pot and bring to a boil. Lightly grease the steaming tray with olive oil.
  4. Transfer the cornmeal mixture to the steaming tray, smoothing it out evenly.
  5. Cover and steam for about 20 minutes, until firm and cooked through.
  6. In a skillet, heat a little olive oil over medium heat. Add the chopped onion, bell pepper, and diced tomato. Sauté until softened, about 5-7 minutes.
  7. Remove the cuscuz from the steamer and let it cool for a few minutes. Then, slice it into wedges.
  8. Serve the cuscuz topped with the sautéed vegetables, crumbled feta cheese, sliced avocado, and chopped cilantro.
