- Cornmeal - 200 grams
- Water - 250 milliliters
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Tomato - 1 medium, diced
- Onion - 1 small, finely chopped
- Bell pepper - 1/2 medium, diced
- Chopped cilantro - 2 tablespoons
- Feta cheese - 50 grams, crumbled
- Avocado - 1/2, sliced
Steps
- In a mixing bowl, combine the cornmeal and salt. Gradually add water while stirring until you achieve a thick, paste-like consistency.
- Let the mixture sit for about 10 minutes to hydrate.
- In a steamer or cuscuzera, add water to the bottom pot and bring to a boil. Lightly grease the steaming tray with olive oil.
- Transfer the cornmeal mixture to the steaming tray, smoothing it out evenly.
- Cover and steam for about 20 minutes, until firm and cooked through.
- In a skillet, heat a little olive oil over medium heat. Add the chopped onion, bell pepper, and diced tomato. Sauté until softened, about 5-7 minutes.
- Remove the cuscuz from the steamer and let it cool for a few minutes. Then, slice it into wedges.
- Serve the cuscuz topped with the sautéed vegetables, crumbled feta cheese, sliced avocado, and chopped cilantro.
