- Tapioca flour - 150 grams
- Water - 200 ml
- Salt - 1/4 teaspoon
- Coconut flakes - 30 grams
- Honey or maple syrup - 2 tablespoons
- Fresh fruit (banana, mango, or berries) - 100 grams
- Grated cheese (optional) - 30 grams
Steps
- In a mixing bowl, combine the tapioca flour and salt.
- Gradually add the water to the flour, stirring continuously until you achieve a consistent, moist mixture.
- Allow the mixture to rest for about 10 minutes to hydrate the tapioca flour.
- In a non-stick skillet over medium heat, spread half of the mixture to form a round cake, about 1 cm thick.
- Cook for approximately 5 minutes or until the edges begin to lift and the bottom is lightly golden.
- Carefully flip the cuscuz and cook for an additional 5 minutes on the other side.
- Transfer to a plate and repeat the process with the remaining mixture to make a second cuscuz.
- Once both cuscuz are cooked, top them with coconut flakes, honey or maple syrup, and fresh fruit. Add grated cheese if desired.
- Serve warm and enjoy your healthy Brazilian breakfast!
