Ingredients

  • Tapioca flour - 150 grams
  • Water - 200 ml
  • Salt - 1/4 teaspoon
  • Coconut flakes - 30 grams
  • Honey or maple syrup - 2 tablespoons
  • Fresh fruit (banana, mango, or berries) - 100 grams
  • Grated cheese (optional) - 30 grams

Steps

  1. In a mixing bowl, combine the tapioca flour and salt.
  2. Gradually add the water to the flour, stirring continuously until you achieve a consistent, moist mixture.
  3. Allow the mixture to rest for about 10 minutes to hydrate the tapioca flour.
  4. In a non-stick skillet over medium heat, spread half of the mixture to form a round cake, about 1 cm thick.
  5. Cook for approximately 5 minutes or until the edges begin to lift and the bottom is lightly golden.
  6. Carefully flip the cuscuz and cook for an additional 5 minutes on the other side.
  7. Transfer to a plate and repeat the process with the remaining mixture to make a second cuscuz.
  8. Once both cuscuz are cooked, top them with coconut flakes, honey or maple syrup, and fresh fruit. Add grated cheese if desired.
  9. Serve warm and enjoy your healthy Brazilian breakfast!
