- Chopped tomatoes - 1/2 cup
- Chopped scallions - 2 tablespoons
- Lime - 1, cut into wedges
Steps
- In a medium bowl, combine the green cornmeal and salt. Gradually add the water while stirring to ensure there are no lumps. Let the mixture sit for about 10 minutes to allow the cornmeal to hydrate.
- While the cornmeal is resting, prepare your toppings by chopping the tomatoes, scallions, and parsley.
- After the 10 minutes, lightly grease a steamer or a small pot with olive oil. Spoon the hydrated cornmeal mixture into the steamer, smoothing the top with a spatula.
- Cover the steamer with a lid and place it over boiling water. Steam for about 15-20 minutes until the cuscuz is firm and cooked through.
- Once cooked, remove the steamer from heat and let it cool for a couple of minutes. Use a knife to gently loosen the edges, then invert onto a plate.
- Top the cuscuz with chopped tomatoes, scallions, and parsley. Serve with lime wedges on the side for a zesty finish.
