- Corn flour - 200 g
- Water - 250 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1, diced
- Tomato - 1, diced
- Chopped parsley - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili flakes - 1/4 teaspoon (optional)
Steps
- In a medium bowl, combine the corn flour and salt. Gradually add water while stirring until you have a thick, smooth mixture.
- Cover the bowl with a cloth and let the mixture rest for about 10 minutes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the diced bell pepper and tomato to the skillet, cooking for an additional 5 minutes until softened. Season with black pepper and chili flakes if using.
- Stir in the chopped parsley and remove from heat.
- Bring a steamer pot with water to a boil. Grease a round mold or a small cake pan.
- Fill the mold with half of the corn flour mixture and press it down firmly. Layer the vegetable mixture over the corn flour, then cover with the remaining corn flour mixture, pressing down again.
- Place the mold in the steamer and cover. Steam for about 20 minutes until firm.
- Once cooked, let it cool for a few minutes before unmolding onto a plate. Slice and serve warm.
