- Bell pepper (red) - 50 grams, diced
- Cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cheese (Parmesan or similar) - 30 grams, grated
Steps
- In a skillet, heat the olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the diced bell pepper and cook for another 3-4 minutes until softened.
- In a mixing bowl, combine the shredded chicken, sautéed vegetables, cornmeal, chicken broth, egg, cilantro, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- Grease a small mold or dish with olive oil, then transfer the mixture into the mold, pressing it down to ensure it holds together.
- Sprinkle the grated cheese on top of the mixture.
- Steam the mold over boiling water for about 15-20 minutes until firm and cooked through.
- Once cooked, let it cool slightly before unmolding. Serve warm, garnished with extra cilantro if desired.
