  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper (red) - 50 grams, diced
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cheese (Parmesan or similar) - 30 grams, grated

Steps

  1. In a skillet, heat the olive oil over medium heat and sauté the onions and garlic until translucent.
  2. Add the diced bell pepper and cook for another 3-4 minutes until softened.
  3. In a mixing bowl, combine the shredded chicken, sautéed vegetables, cornmeal, chicken broth, egg, cilantro, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  4. Grease a small mold or dish with olive oil, then transfer the mixture into the mold, pressing it down to ensure it holds together.
  5. Sprinkle the grated cheese on top of the mixture.
  6. Steam the mold over boiling water for about 15-20 minutes until firm and cooked through.
  7. Once cooked, let it cool slightly before unmolding. Serve warm, garnished with extra cilantro if desired.
