Ingredients

  • all-purpose flour - 125 grams
  • milk - 250 ml
  • eggs - 2 large
  • salt - 1/4 teaspoon
  • butter - 30 grams (for cooking)
  • canned palm hearts - 200 grams, drained and sliced
  • cream cheese - 100 grams
  • grated Parmesan cheese - 30 grams
  • fresh parsley - 2 tablespoons, chopped
  • black pepper - to taste

Steps

  1. In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth to create the crepe batter. Let it rest for 10 minutes.
  2. In a separate bowl, combine the sliced palm hearts, cream cheese, grated Parmesan, chopped parsley, and black pepper. Mix well and set aside.
  3. Heat a non-stick skillet over medium heat and melt a small amount of butter. Pour in a ladle of crepe batter, swirling the pan to evenly coat the bottom.
  4. Cook the crepe for about 2 minutes until the edges start to lift, then flip and cook for an additional minute. Transfer to a plate and repeat with the remaining batter, adding more butter as needed.
  5. Once all crepes are cooked, place a generous spoonful of the palm heart filling in the center of each crepe, fold them over, and serve warm.
