Ingredients

  • Cooked shredded chicken - 200 grams
  • Cream cheese - 100 grams
  • Almond flour - 150 grams
  • Egg - 1 large
  • Parmesan cheese - 50 grams, grated
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. In a bowl, mix the shredded chicken with cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Set aside.
  2. In another bowl, combine almond flour, grated Parmesan cheese, and the egg. Mix until a dough forms.
  3. Divide the dough into small balls (about the size of a golf ball) and flatten each ball in your palm to create a disc.
  4. Place a spoonful of the chicken mixture in the center of each disc and fold the edges over the filling to create a teardrop shape. Pinch to seal tightly.
  5. Heat olive oil in a frying pan over medium heat. Fry the coxinhas for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the pan and drain on paper towels before serving.
