Ingredients
- Cooked shredded chicken - 200 grams
- Cream cheese - 100 grams
- Almond flour - 150 grams
- Egg - 1 large
- Parmesan cheese - 50 grams, grated
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- In a bowl, mix the shredded chicken with cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Set aside.
- In another bowl, combine almond flour, grated Parmesan cheese, and the egg. Mix until a dough forms.
- Divide the dough into small balls (about the size of a golf ball) and flatten each ball in your palm to create a disc.
- Place a spoonful of the chicken mixture in the center of each disc and fold the edges over the filling to create a teardrop shape. Pinch to seal tightly.
- Heat olive oil in a frying pan over medium heat. Fry the coxinhas for about 3-4 minutes on each side, or until golden brown and crispy.
