Ingredients
- Chicken breast - 300 grams
- Cream cheese - 100 grams
- Almond flour - 150 grams
- Egg - 1 large
- Parmesan cheese, grated - 50 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - for frying
Steps
- Boil the chicken breast in salted water for about 20 minutes or until cooked through. Drain and shred the chicken, then set aside.
- In a bowl, mix the shredded chicken with cream cheese, garlic powder, onion powder, salt, and black pepper until well combined. Set aside.
- In another bowl, combine almond flour, grated Parmesan cheese, and salt. Add the egg and mix until it forms a dough.
- Divide the dough into small balls, about the size of a golf ball. Flatten each ball in your palm to create a disc.
- Place a spoonful of the chicken mixture in the center of each disc, then fold the dough over the filling and shape it into a teardrop or coxinha shape.
- Heat olive oil in a frying pan over medium heat. Fry each coxinha until golden brown and crispy, about 3-4 minutes on each side.
- Remove from the pan and let drain on paper towels before serving.
