Ingredients
- Chicken breast - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cream cheese - 50 grams
- Chicken broth - 250 ml
- Flour - 150 grams
- Butter - 30 grams
- Egg - 1 large, beaten
- Breadcrumbs - 100 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - for frying
Steps
- In a pot, cook the chicken breast in boiling water until fully cooked, about 15-20 minutes. Remove the chicken, shred it, and set aside.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the shredded chicken to the skillet, along with cream cheese, salt, and black pepper. Mix well, and cook for 5 minutes. Set the filling aside to cool.
- In a saucepan, melt the butter over medium heat. Add the flour and stir continuously for about 2 minutes until golden.
- Gradually add the chicken broth, stirring constantly until a smooth dough forms. Remove from heat and let it cool slightly.
- Once the dough is cool enough to handle, take a small portion, flatten it in your hand, and place a spoonful of the chicken filling in the center. Shape the dough around the filling into a teardrop shape.
- Repeat the process until all the dough and filling are used.
- Dip each coxinha into the beaten egg, then coat with breadcrumbs.
- In a deep pan, heat olive oil for frying. Fry the coxinhas in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
- Serve warm with your favorite dipping sauce.
