Ingredients
- Shredded cooked chicken - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 250 ml
- All-purpose flour - 150 grams
- Butter (or margarine) - 50 grams
- Egg - 1, beaten
- Breadcrumbs - 100 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - as needed for dough
Steps
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Stir in the shredded cooked chicken and season with salt, black pepper, and chopped parsley. Mix well and set aside to cool.
- In a pot, melt the butter over medium heat. Add the flour and stir for about 2 minutes until golden.
- Gradually add the chicken broth, stirring constantly until the mixture thickens into a dough. Remove from heat and let it cool slightly.
- Knead the dough on a floured surface until smooth. Divide the dough into small balls (about 50 grams each).
- Flatten each ball into a disc, add a spoonful of the chicken filling in the center, and fold the edges over to form a teardrop shape. Ensure it's sealed properly.
- Dip each coxinha in the beaten egg, then roll in breadcrumbs to coat.
- Heat oil in a deep pan over medium heat. Fry the coxinhas until golden brown and crispy, about 4-5 minutes per side.
- Remove and drain on paper towels. Serve warm.
