Ingredients

  • Shredded cooked chicken - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken broth - 250 ml
  • All-purpose flour - 150 grams
  • Butter (or margarine) - 50 grams
  • Egg - 1, beaten
  • Breadcrumbs - 100 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - as needed for dough

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Stir in the shredded cooked chicken and season with salt, black pepper, and chopped parsley. Mix well and set aside to cool.
  3. In a pot, melt the butter over medium heat. Add the flour and stir for about 2 minutes until golden.
  4. Gradually add the chicken broth, stirring constantly until the mixture thickens into a dough. Remove from heat and let it cool slightly.
  5. Knead the dough on a floured surface until smooth. Divide the dough into small balls (about 50 grams each).
  6. Flatten each ball into a disc, add a spoonful of the chicken filling in the center, and fold the edges over to form a teardrop shape. Ensure it's sealed properly.
  7. Dip each coxinha in the beaten egg, then roll in breadcrumbs to coat.
  8. Heat oil in a deep pan over medium heat. Fry the coxinhas until golden brown and crispy, about 4-5 minutes per side.
  9. Remove and drain on paper towels. Serve warm.
