Ingredients

  • Collard greens - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Wash the collard greens thoroughly and remove the tough stems. Stack the leaves, roll them tightly, and slice them into thin strips.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the smoked paprika, cumin, salt, and black pepper, cooking for another minute to release the spices' flavors.
  5. Add the sliced collard greens to the skillet and toss to coat with the spice mixture. Cook for about 5-7 minutes, stirring occasionally, until the greens are tender but still vibrant.
  6. Add the halved cherry tomatoes and lemon juice, stirring to combine. Cook for another 2-3 minutes until the tomatoes are slightly softened.
  7. Remove from heat and garnish with chopped fresh parsley before serving.
