Steps
- Wash the collard greens thoroughly and remove the tough stems. Stack the leaves, roll them tightly, and slice them into thin strips.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Stir in the smoked paprika, cumin, salt, and black pepper, cooking for another minute to release the spices' flavors.
- Add the sliced collard greens to the skillet and toss to coat with the spice mixture. Cook for about 5-7 minutes, stirring occasionally, until the greens are tender but still vibrant.
- Add the halved cherry tomatoes and lemon juice, stirring to combine. Cook for another 2-3 minutes until the tomatoes are slightly softened.
