Ingredients

  • Tambaqui ribs - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. In a bowl, combine olive oil, minced garlic, lime juice, chopped cilantro, paprika, cumin, salt, black pepper, and chili flakes to create the marinade.
  2. Place the tambaqui ribs in a large resealable bag or a shallow dish and pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 1-2 hours.
  3. Preheat the grill to medium-high heat. Remove the ribs from the marinade and let excess marinade drip off.
  4. Grill the tambaqui ribs for about 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
  5. Serve the grilled tambaqui ribs hot, garnished with extra chopped cilantro and lime wedges on the side.
