- Pork ribs - 600 grams
- Garlic - 4 cloves, minced
- Smoked paprika - 1 tablespoon
- Cumin - 1 teaspoon
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 1/2 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Red wine vinegar - 2 tablespoons
- Red chili flakes - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 150°C (300°F).
- In a bowl, mix the minced garlic, smoked paprika, cumin, black pepper, salt, and olive oil to create a marinade.
- Rub the marinade evenly over the pork ribs, ensuring they are well coated. Let them marinate for at least 30 minutes, or overnight for best results.
- Place the marinated ribs on a baking tray lined with parchment paper and cover tightly with aluminum foil.
- Bake in the preheated oven for 2 hours until the ribs are tender.
- While the ribs are baking, prepare the chimichurri sauce by combining chopped parsley, cilantro, red wine vinegar, red chili flakes, and lemon juice in a bowl. Mix well and set aside.
- After 2 hours, remove the foil from the ribs and turn the oven to broil. Broil for an additional 10-15 minutes until the ribs are caramelized and slightly crispy on the edges.
- Remove from the oven and let the ribs rest for 5 minutes before slicing them.
- Serve the ribs hot with the chimichurri sauce drizzled on top.
