  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili flakes - 1/2 teaspoon

Steps

  1. In a bowl, mix minced garlic, chopped rosemary, thyme, olive oil, lemon juice, paprika, salt, black pepper, and chili flakes to create the marinade.
  2. Rub the marinade generously over the lamb ribs, ensuring they are well coated. Cover and refrigerate for at least 1 hour or preferably overnight for maximum flavor.
  3. Preheat your grill to medium-high heat. Remove the lamb ribs from the refrigerator and let them sit at room temperature for about 20 minutes.
  4. Place the marinated lamb ribs on the grill, bone side down. Grill for about 5-7 minutes per side, or until the internal temperature reaches 60°C (140°F) for medium-rare.
  5. Once cooked, remove the ribs from the grill and let them rest for 10 minutes before slicing.
  6. Serve the Costela de Cordeiro hot, garnished with fresh herbs if desired.
