Steps
- In a bowl, mix minced garlic, chopped rosemary, thyme, olive oil, lemon juice, paprika, salt, black pepper, and chili flakes to create the marinade.
- Rub the marinade generously over the lamb ribs, ensuring they are well coated. Cover and refrigerate for at least 1 hour or preferably overnight for maximum flavor.
- Preheat your grill to medium-high heat. Remove the lamb ribs from the refrigerator and let them sit at room temperature for about 20 minutes.
- Place the marinated lamb ribs on the grill, bone side down. Grill for about 5-7 minutes per side, or until the internal temperature reaches 60°C (140°F) for medium-rare.
- Once cooked, remove the ribs from the grill and let them rest for 10 minutes before slicing.
