Ingredients

  • Beef ribs - 800 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Paprika - 1 tablespoon
  • Cumin - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh rosemary - 1 tablespoon, chopped
  • Lemon juice - 2 tablespoons
  • Red onion - 1 medium, sliced

Steps

  1. In a bowl, mix olive oil, minced garlic, paprika, cumin, black pepper, salt, chopped rosemary, and lemon juice to create a marinade.
  2. Rub the marinade generously over the beef ribs, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the ribs from the marinade and let them come to room temperature for about 30 minutes before grilling.
  5. Place the ribs on the grill and cook for about 10-15 minutes per side, or until they reach an internal temperature of 75°C (165°F) and are nicely charred.
  6. During the last few minutes of grilling, add the sliced red onion to the grill to caramelize.
  7. Once done, remove the ribs from the grill, let them rest for 10 minutes, then serve with the grilled onions.
