- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Fresh rosemary - 1 tablespoon, chopped
- Lemon juice - 2 tablespoons
- Red onion - 1 medium, sliced
Steps
- In a bowl, mix olive oil, minced garlic, paprika, cumin, black pepper, salt, chopped rosemary, and lemon juice to create a marinade.
- Rub the marinade generously over the beef ribs, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
- Preheat the grill to medium-high heat.
- Remove the ribs from the marinade and let them come to room temperature for about 30 minutes before grilling.
- Place the ribs on the grill and cook for about 10-15 minutes per side, or until they reach an internal temperature of 75°C (165°F) and are nicely charred.
- During the last few minutes of grilling, add the sliced red onion to the grill to caramelize.
- Once done, remove the ribs from the grill, let them rest for 10 minutes, then serve with the grilled onions.
