  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a large bowl, combine minced garlic, chopped rosemary, olive oil, lemon juice, salt, black pepper, paprika, and chili flakes to create a marinade.
  2. Cut the lamb shoulder into 4 equal pieces and add them to the marinade, ensuring each piece is well coated.
  3. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours for deeper flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the lamb from the marinade and let excess marinade drip off.
  6. Place the lamb pieces on the grill and cook for about 6-8 minutes on each side for medium-rare, or until a meat thermometer reads 60°C (140°F).
  7. Once cooked, remove the lamb from the grill and let it rest for 5 minutes.
  8. Serve hot, garnished with fresh parsley.
