Steps
- In a bowl, combine the red wine, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
- Cut the lamb shoulder into chunks and add it to the marinade, ensuring all pieces are well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.
- Remove the lamb from the marinade and pat it dry with paper towels. Reserve the marinade for later use.
