Ingredients

  • Lamb shoulder - 500 grams
  • Red wine (dry) - 200 milliliters
  • Olive oil - 2 tablespoons
  • Garlic cloves (minced) - 3 cloves
  • Fresh rosemary (chopped) - 1 tablespoon
  • Fresh thyme (chopped) - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Onion (sliced) - 1 medium
  • Bay leaves - 2 leaves

Steps

  1. In a bowl, combine the red wine, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
  2. Cut the lamb shoulder into chunks and add it to the marinade, ensuring all pieces are well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.
  3. Remove the lamb from the marinade and pat it dry with paper towels. Reserve the marinade for later use.
  4. In a large skillet or grill pan, heat the olive oil over medium-high heat. Add the onion slices and sauté until they are translucent.
  5. Add the marinated lamb to the skillet, searing it on all sides until browned, approximately 5-7 minutes.
  6. Pour the reserved marinade and bay leaves into the skillet, reduce the heat to low, and cover. Let it simmer for about 1 hour, or until the lamb is tender.
  7. Check for seasoning and adjust with more salt and pepper if necessary.
  8. Serve the lamb hot, garnished with fresh herbs and accompanied by your choice of gluten-free sides.
