Ingredients
- Unsweetened shredded coconut - 100 grams
- Coconut cream - 200 ml
- Erythritol - 3 tablespoons
- Vanilla extract - 1 teaspoon
- Egg yolks - 2 large
- Salt - a pinch
Steps
- In a saucepan, combine the unsweetened shredded coconut, coconut cream, erythritol, and a pinch of salt. Mix well over medium heat until the mixture is heated through and slightly thickened, about 5 minutes.
- In a separate bowl, whisk the egg yolks and vanilla extract together until well combined.
- Slowly add the warm coconut mixture to the egg yolk mixture while continuously whisking to prevent the eggs from scrambling.
- Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens to a custard-like consistency, approximately 10-15 minutes.
- Remove from heat and let it cool slightly before transferring it to serving dishes. Refrigerate for at least 15 minutes before serving.
