Steps

  1. In a saucepan, combine the unsweetened shredded coconut, coconut cream, erythritol, and a pinch of salt. Mix well over medium heat until the mixture is heated through and slightly thickened, about 5 minutes.
  2. In a separate bowl, whisk the egg yolks and vanilla extract together until well combined.
  3. Slowly add the warm coconut mixture to the egg yolk mixture while continuously whisking to prevent the eggs from scrambling.
