Ingredients
- Zucchini - 1 medium, sliced into thick rounds
- Red bell pepper - 1, cut into large chunks
- Yellow bell pepper - 1, cut into large chunks
- Portobello mushrooms - 2 large, cleaned and stems removed
- Firm tofu - 200 grams, pressed and cut into thick slices
- Olive oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- In a large bowl, mix olive oil, soy sauce, garlic powder, smoked paprika, cumin, black pepper, and salt to create a marinade.
- Add the sliced zucchini, bell peppers, Portobello mushrooms, and tofu to the bowl, ensuring all pieces are well coated with the marinade. Let them marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Once the grill is hot, place the marinated vegetables and tofu on the grill. Cook for about 5-7 minutes on each side, or until they have nice grill marks and are tender.
- Remove the grilled vegetables and tofu from the grill and let them rest for a couple of minutes.
- Serve the Churrasco Vegano hot, garnished with fresh parsley.
