Ingredients

  • Zucchini - 1 medium, sliced into thick rounds
  • Red bell pepper - 1, cut into large chunks
  • Yellow bell pepper - 1, cut into large chunks
  • Portobello mushrooms - 2 large, cleaned and stems removed
  • Firm tofu - 200 grams, pressed and cut into thick slices
  • Olive oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a large bowl, mix olive oil, soy sauce, garlic powder, smoked paprika, cumin, black pepper, and salt to create a marinade.
  2. Add the sliced zucchini, bell peppers, Portobello mushrooms, and tofu to the bowl, ensuring all pieces are well coated with the marinade. Let them marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Once the grill is hot, place the marinated vegetables and tofu on the grill. Cook for about 5-7 minutes on each side, or until they have nice grill marks and are tender.
  5. Remove the grilled vegetables and tofu from the grill and let them rest for a couple of minutes.
  6. Serve the Churrasco Vegano hot, garnished with fresh parsley.
