Ingredients

  • Yellow bell pepper - 1, cut into thick strips
  • Red onion - 1 medium, cut into wedges
  • Mushrooms - 200 grams, halved
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh parsley - 1/4 cup, chopped
  • Fresh oregano - 1 tablespoon, chopped
  • Red wine vinegar - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a bowl, whisk together olive oil, minced garlic, chopped parsley, oregano, red wine vinegar, salt, and black pepper to create the chimichurri marinade.
  2. Add the sliced zucchini, bell peppers, red onion, and mushrooms to the bowl, mixing well to coat all the vegetables with the marinade. Let it marinate for at least 15 minutes.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Thread the marinated vegetables onto skewers, alternating between different types for variety.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
  6. Remove from the grill and let rest for a couple of minutes before serving.
