Ingredients

  • Lamb shoulder - 400 grams
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Skewers - 2 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a bowl, combine minced garlic, chopped rosemary, olive oil, lemon juice, salt, black pepper, paprika, and chili flakes to create a marinade.
  2. Cut the lamb shoulder into 2.5 cm cubes and add to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.
  3. Preheat the grill or barbecue to medium-high heat.
  4. Thread the marinated lamb onto the skewers, leaving a little space between each piece.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the lamb is nicely browned and cooked to your desired doneness.
  6. Remove from the grill and let rest for 5 minutes before serving.
  7. Serve hot with your choice of sides, such as grilled vegetables or a fresh salad.
